Seoul Tacos

With tacos, anything goes. Try this fun twist on the classic taco. It’s savory and spicy, featuring marinated pork, pickled onions and a crunchy kimchi slaw. Top it all off with orange ginger sauce and sesame seeds.

Serves 12.

Pork Shoulder

5 pounds pork shoulder
2 cups water
1 cup soy sauce
1/3 cup rice wine vinegar
1 tablespoon chopped garlic
1 teaspoon crushed red pepper
1 teaspoon Sriracha
2 tablespoons sugar

Clean and then marinate pork shoulder overnight. Bake at 350 degrees for 2-3 hours.

Kimchi Slaw

1 bag coleslaw mix
1 cup chopped kale (optional)
1 cup soy sauce
1/4 cup lime juice
1 tablespoon sesame oil
1 tablespoon sugar
2 tablespoons sesame seeds

Mix and marinate for two hours.

Pickled Onions

1 medium sliced red onion
1/4 cup soy sauce
1 teaspoon lime juice
1 teaspoon sesame seeds
1 teaspoon sugar
1 tablespoon chopped cilantro

Mix and marinate for two hours.

Seoul Sauce

1/3 cup Sriracha
1 tablespoon hot sauce
1 teaspoon honey
1/4 teaspoon sesame oil
1/4 teaspoon sesame seeds

Mix all ingredients together.
