Created in 2016, the Culinary Innovation Council (CIC) is charged with developing comprehensive culinary programming that will enable Creative Dining Services to stay up-to-date on industry culinary trends and best practices, ensuring these trends and practices are incorporated within menuing across all business segments. They are also charged with overseeing the dissemination of information and resources needed to embed identified culinary innovation and best practices at all Creative Dining locations.
Lead by Ian Ramirez, our Director of Culinary Innovation and Operations, the council is comprised of eight members, representing the following disciplines: Nutrition & Wellness, College Board Dining, Retail Dining, Healthcare Dining, and Culinary Training.
In the summer of 2018, the CIC held it’s first annual Chef Lab, a three day intensive training course for Creative Dining culinarians. The training included Culinary Trends, Advanced Plating, Design Thinking, Flavor Mapping, Sustainability, Food Costing, and more.
